I noticed the service menu (in the lcd screen) keeps track of mileage put on the engine between oil changes. If I have the oil changed at Jiffy Lube or somewhere similar, how does that affect the counter? Will it reset on its own when the oil is changed?

It's only a manual entry to tell/give you a reminder to do the oil change. You can change it yourself...read Vol 1 of the Encyclopedia that Infiniti gave you. Otherwise known as the owners manual
